COCONUT PUDDING


INGREDIENTS
1/2 kg apples - peeled, cut in to 1/2" pieces
1/4 cup plus 1/2 cup powdered suger
1/2 cup butter - softened
1 cup flour maida (plain flour)
1 tsp baking powder
1/2 cup desiccated coconut powder
2 tbsp raisins, 2 eggs
1 tsp vanilla essence
1/2 cup milk
TOPPING
1tsp melted butter, 2 tbsp brown suger
METHOD
1. Mix apples with 1/4 cup suger and 1 tbsp butter in a microproof dish. Microwave for 4 minutes. Check suger and add to taste. Keep aside.
2. Sift flour&baking powder. Add coconut powder and raisins.
3. Separate egg whites in a dry bowl. Beat till stiff peaks form. Keep aside.
4. In a big mixing bowl, beat butter and 1/2 cup powdered suger untill light and fluffy.
5. Add egg yolks and essence. MIx well.
6. Add flour mix and milk in to the butter mixture. Beat well to get a soft dropping consistency.
7. Gently fold the beaten egg whites with a spoon in to the pudding mixture. Spread over the fruit. Sprinkle brown suger and some melted butter.
8. Bake in a pre-heated oven on convecmode at 180* C for 30 minutes or until firm to touch. Remove from oven. Serve pudding with hot or cold custard or cream.
